I suggest you maintain the doc for it on our wiki at http://wiki.eluaproject.net/Projects.
As we're doing for all (our) other projects, you can keep a small text with a link to the eLua wiki entry at github. Of course, if you prefer github's wiik, you can do the opposite but please try to keep an entry on the eLua wiki to make easier for the community to find the projects and to promote code reuse.
Our (MoinMoin-based) wiki, thanks to James Snyder, allows code rendering with syntax highlight (C, Lua, Python...) directly from github's repos.
Please let me know if you need help to start with MoinMoin
